Definition: The percentage of total restaurant sales spent on food product, should stay around 28-30%, a steakhouse will have a higher food cost of around 35%, this number must be accurately tracked to figure out total profits for restaurant.
Examples: The general manager at the restaurant told the executive chef to bring the food cost down to save some money.
